Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
Pat swordfish steaks dry, brush with olive oil, then season both sides with sea salt and black pepper.
Melt butter in a saucepan over medium heat, add minced garlic and sauté until fragrant (≈30 seconds).
Add white wine, reduce by half, then stir in lemon zest and juice; let the sauce simmer for 2 minutes.
Place seasoned swordfish on the sheet, spoon the lemon‑butter sauce over each steak, and brush the top for an even glaze.
Bake for 12‑15 minutes, flip, baste with remaining sauce, and bake another 10‑12 minutes until internal temperature hits 145°F.
Remove from oven, sprinkle chopped parsley (and optional red‑pepper flakes) over the fish, and let rest 3‑5 minutes.
