In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
In a separate measuring cup or bowl, combine soy milk, water, and canola oil (if using). Stir together.
Pour the wet ingredients into the dry ingredients, and mix gently until just combined. Do not overmix; a few lumps are okay.
Heat a griddle or frying pan over medium-high heat. Lightly grease with vegan butter or oil.
Pour about 1/3 cup of batter onto the hot griddle. Cook until bubbles form on top, then flip and cook for another 1-2 minutes, until golden brown.
Serve immediately with vegan butter, maple syrup, and your favorite fruit!
