Making the Flan
Preheat your oven to 350°F (175°C).
In a medium saucepan, combine 1 cup of granulated sugar and 1/3 cup of water. Cook over medium-high heat for about 10-15 minutes, until the caramel turns a deep amber color. Quickly pour the caramel into an 8-inch cake pan to set.
In a separate bowl, whisk together the large eggs, egg yolks, and 1/2 cup of sugar until smooth. In another bowl, mix the heavy cream, whole milk, vanilla extract, and kosher salt. Gradually incorporate the cream mixture into the egg mixture.
Gently pour the creamy custard over the hardened caramel in the cake pan.
Place the cake pan inside a larger baking dish. Add hot water to the outer dish until it reaches halfway up the sides of the cake pan.
Bake for 50-55 minutes until the custard is set but still jiggles slightly. Cool on a wire rack before chilling in the refrigerator for at least 2 hours.
Once chilled, use a knife to loosen the edges of the flan and invert it onto a large plate.
