Add onions and bell peppers to the pan and sauté until softened, about 3–4 minutes. Remove from heat.
Whisk together eggs, milk, salt, and pepper in a bowl. Melt butter in the skillet and pour in the egg mixture. Cook gently, stirring, until eggs are just set.
Warm tortillas in a dry skillet for 20 seconds per side or wrap in foil and heat in the oven.
Assemble tacos by filling each tortilla with scrambled eggs, meat, vegetables, and cheese. Add toppings like salsa, avocado, or cilantro.
Fold and serve warm.
