Cook the Noodles First, cook the dangmyeon noodles according to the package instructions. Usually, this involves boiling them for about 5-7 minutes until they’re tender but still have a chewy bite. Drain them and rinse under cold water to stop the cooking process and prevent them from sticking together.
Prepare the Sauce While the noodles are cooking, whisk together the soy sauce, sesame oil, sugar, and minced garlic in a small bowl. Set this aside to use later.
Stir-Fry the Beef Heat a little bit of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced beef and stir-fry for 3-4 minutes until it’s cooked through and slightly browned. Remove the beef from the pan and set it aside.
Sauté the Vegetables In the same pan, add a bit more oil and sauté the onion, carrot, bell pepper, and mushrooms (if using) for about 3-4 minutes, until they’re tender but still have a little bite. Add the spinach last, and cook until it wilts down, about 1-2 minutes.
Combine the Noodles and Beef Add the cooked noodles and beef back into the skillet with the vegetables. Pour the sauce over the mixture and toss everything together until the noodles are evenly coated and all the ingredients are mixed well.
Finish with Garnishes Transfer the Japchae to a serving dish and sprinkle with toasted sesame seeds and chopped green onions. You can also drizzle a little more sesame oil over the top for extra flavor.
