This easy Crockpot Breakfast Casserole is the ultimate make-ahead morning meal, loaded with layers of hash browns, eggs, sausage, and two cheeses. Cooked overnight in a slow cooker, it’s a comforting, hearty breakfast perfect for holidays, brunches, or busy mornings.

Spray the inside of the crockpot with non-stick cooking spray.
In a bowl, mix together the cheddar and pepper jack cheeses. Set aside.
In a separate bowl, combine the cooked sausage, onions, and bell peppers.
In a large mixing bowl, beat the eggs, then whisk in the milk, salt, and pepper.
Layer 1/3 of the hash browns on the bottom of the crockpot.
Top with 1/3 of the sausage mixture and 1 cup of the cheese blend.
Repeat the layers two more times, ending with cheese on top.
Pour the egg mixture evenly over the entire casserole.
Cover and cook on low for 8 hours overnight.
