The Mediterranean Bowl is a healthy and vibrant dish featuring crispy roasted chickpeas, fresh veggies, creamy hummus, and tangy feta cheese, all served over fluffy quinoa. It's a protein-packed meal that's quick to prepare and perfect for meal prep or a satisfying dinner.

Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper.
In a bowl, combine chickpeas with olive oil, garlic powder, smoked paprika, onion powder, oregano, salt, and black pepper. Toss to coat the chickpeas evenly.
Spread the seasoned chickpeas on the prepared baking sheet and roast for 20 minutes, stirring halfway through. Once crispy, set aside.
Rinse the quinoa under cold water. In a saucepan, combine the quinoa with 1 cup of water (or chicken broth) and bring to a boil. Reduce heat and simmer for 15 minutes or until water is absorbed. Fluff with a fork and set aside.
Assemble the bowl by layering 2 cups of chopped lettuce. Top with cherry tomatoes, cucumbers, bell pepper, red onion, and kalamata olives.
Add the roasted chickpeas and quinoa. Spoon hummus into the center and crumble feta cheese on top.
Garnish with sesame seeds and fresh parsley.
