Corned Beef

Heat oil in a skillet. Sear corned beef on both sides until golden, about 2-3 minutes per side.
Combine beef broth and mustard. Deglaze skillet with this mixture and pour into slow cooker.
Place seared beef into the slow cooker. Add garlic, onion, peppercorns, thyme, bay leaves, and spice packet.
Cook on low for 6-7 hours.
Prepare and add carrots to the slow cooker. Continue cooking for 1-2 hours.
