Add cottage cheese, eggs, flour, baking powder, vanilla, sugar, and salt to a blender. Blend 30-45 seconds until smooth. Rest batter 2-3 minutes.

Pour batter in rounds of about 3 tablespoons each. Cook 2-3 minutes until bubbles form on the surface and edges look set.
