In a large mixing bowl, combine ground pork, chopped shrimp, finely chopped green onions, minced ginger, minced garlic, soy sauce, sesame oil, salt, and pepper. Stir thoroughly until your filling is well-blended and fragrant.
Take a wonton wrapper and place about a teaspoon of your savory filling right in the center.
Dab a tiny bit of water on the edges of the wrapper to help it stick. Fold it in half diagonally and press to seal. Bring the two outer points together and pinch to secure the wonton.
In a large pot, bring the chicken broth to a rolling boil. Carefully add the wontons and cook for about 5-7 minutes, or until they float to the top.
Stir in the spinach or bok choy, allowing them to wilt for about 2-3 minutes.
Carefully taste the broth and season with additional salt, pepper, or more soy sauce as needed.
