Divide salmon mixture into 8 equal portions, and shape each portion into a round patty about ½ inch thick. Refrigerate for 10–15 minutes.
Pour breadcrumbs into a shallow dish and coat each croquette. Return them to the tray.
Heat vegetable oil in a skillet over medium heat. Fry croquettes for 3–4 minutes on each side until golden brown.
