Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle each half with 1 tablespoon of olive oil and season with salt, pepper, and optional smoked paprika or chili powder. Place cut side down on a parchment-lined baking sheet and roast for 35-45 minutes.
Once the squash is cool, scrape the flesh into strands with a fork. Heat the remaining tablespoon of olive oil in a pan, add minced garlic, and sauté for about 1 minute until fragrant.
Pour the garlic oil over the spaghetti squash strands and toss gently to coat.
Sprinkle grated Parmesan over the squash and return to the oven for another 5 minutes to melt the cheese.
Remove from the oven, sprinkle with chopped parsley, and serve warm.
