This blackened salmon is pan seared in a hot cast iron skillet with a smoky homemade spice rub, then finished with butter and lemon. Crispy crust, juicy center, and ready in 15 minutes.

Ingredients
Instructions
In a small bowl, mix the paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and pepper.
Pat the salmon fillets very dry. Brush the flesh side with 1 tablespoon of avocado oil.
, then press the spice mix onto the flesh and sides only (not the skin). Heat the remaining 1 tablespoon of oil in a cast iron skillet over medium high heat for about 3 minutes, until the oil shimmers.
Place the fillets skin side down and cook for 3 to 4 minutes, until the skin is crisp and the fish is cooked about two thirds of the way up. Flip the fillets onto the spice side. Keep the heat at medium high and cook without moving them for 2 to 3 minutes, until a dark crust forms.
Reduce the heat to medium, add the butter, and spoon it over the fillets. Remove from the heat when the thickest part reaches 130 to 135°F (or 145°F for fully cooked, per USDA). Rest for 2 minutes, squeeze lemon on top, and garnish with parsley.
