Preheat your oven to 375°F (190°C).
In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
Heat olive oil in an oven-safe skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until tender.
Add the spinach and cherry tomatoes to the skillet and cook for another 2-3 minutes, until the spinach is wilted.
Pour the egg mixture into the skillet and let cook undisturbed for 2-3 minutes. Sprinkle mozzarella and parmesan cheese evenly over the top.
Transfer the skillet to the oven and bake for 15-18 minutes, or until the frittata is set and slightly golden. Let cool for a few minutes before slicing and serving.
