Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish to prevent sticking.
In a large bowl, whisk together the milk, eggs, maple syrup or brown sugar, melted butter or coconut oil, and vanilla extract until well combined.
Stir in the rolled oats, baking powder, cinnamon, salt, and any optional mix-ins you desire, such as berries or nuts, until everything is evenly incorporated.
Pour the oatmeal mixture into the prepared baking dish and spread it evenly.
