Air Fryer Donuts
These Air Fryer Donuts are fluffy, delicious, and a healthier alternative to traditional fried donuts. Made with minimal oil and sweeteners suitable for a diabetes-friendly diet, they allow for customization with various toppings while providing a guilt-free indulgence.

Activate the yeast by combining warm water and a pinch of granulated sweetener. Sprinkle yeast over and let sit for 5-10 minutes until foamy.
Add the remaining granulated sweetener, almond milk, egg, and vanilla extract to the activated yeast mixture. Whisk together until combined.
In a separate bowl, whisk together 2 ½ cups of flour and salt. Gradually add to wet ingredients until a shaggy dough forms; then add olive oil.
Knead the dough on a floured surface for 5-7 minutes until soft and elastic. Let rise in a greased bowl, covered, for 1 to 1 ½ hours, or until doubled in size.
Punch down the dough and roll it to ½-inch thickness. Cut out donuts using a donut cutter. Let them rise for another 20-30 minutes.
Preheat the air fryer to 350°F (175°C). Air fry the donuts in batches, brushing with oil, for a total of 5-9 minutes until golden brown.
Cool the donuts on a wire rack. Prepare the glaze by mixing powdered sweetener, almond milk, and vanilla. Dip cooled donuts in the glaze and let set.
Notes
- Store cooled donuts in an airtight container at room temperature for 2 days or refrigerate for 3-4 days. For longer storage, freeze unglazed donuts for up to 3 months and reheat in the air fryer.
