Ingredients
Instructions
In a large mixing bowl, add the oat flour, whole wheat flour, yeast, sugar, and salt. Whisk until the ingredients are evenly mixed.
Pour in the lukewarm water and olive oil. Use a nonstick spatula to mix and fold the dough gently. Avoid using your hands.
Knead with the spatula for about two minutes. Then cover the bowl with a clean towel or plastic wrap and let it rest for 45–60 minutes.
Transfer the dough onto a nonstick surface. Shape it gently into an oval, then divide into six equal portions.
Place each dough ball on parchment paper. Use a rolling pin to flatten each into a round tortilla shape.
Heat a nonstick skillet on low. Do not add oil. Lay a tortilla flat in the pan and cover with a lid. Cook 1–2 minutes per side.
As each tortilla finishes cooking, place it in a bowl and cover with a clean cloth towel to keep them moist.
Let tortillas cool completely before serving. Use them for wraps, tacos, or any flatbread-based meal.
