Using a pineapple corer, remove flesh from top three-quarters of inside of pineapples. (Be careful not to pierce through bottom of pineapple—your drinks will leak!) Using a knife, carefully remove remaining core; discard.
Chop flesh from 1 cored pineapple into large chunks. Transfer to a blender. Add coconut cream, light rum, dark rum, milk, and juice; reserve remaining cored pineapple. Fill blender with ice. Blend, adding more milk or juice if mixture is too thick, until slushy.
Pour drinks into pineapple shells and top with a paper umbrella.
