This beef tenderloin is super easy to make for your holiday dinner, thanks to a marinade made up of simple ingredients and a surprisingly quick cook time.

In a large bowl, mix smashed garlic, oil, vinegar, honey, mustard, rosemary sprigs, thyme, and bay leaf. Add beef, cover with plastic wrap, and refrigerate at least 1 hour and up to 1 day.
Bring beef up to room temperature, if desired.
Preheat oven to 450º. Line a baking sheet with foil and set a wire rack inside. Remove tenderloin from marinade and pat dry with paper towels. Season with chopped garlic, chopped rosemary, salt, and pepper. Arrange in prepared rack.
Roast until cooked to your liking, about 20 minutes for rare. Let rest 5 to 10 minutes before slicing.
Yogurt Sauce
In a medium bowl, whisk yogurt, sour cream, horseradish, and lemon juice; season with salt.
Transfer beef to a cutting board and slice. Arrange on a platter. Serve with sauce alongside.
