Begin by preparing the butternut squash. Use a sharp knife to peel the squash, then cut it in half to remove the seeds. Cube the flesh into bite-sized pieces.
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5-7 minutes until the onion is soft and translucent.
Stir in the minced garlic and cook for an additional 1-2 minutes, just until fragrant. Be careful not to let the garlic burn.
Add the cubed butternut squash to the pot and mix it with the onion and garlic. Sprinkle in the ground ginger and ground cumin, stirring well to coat the squash evenly with the spices.
Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 20-25 minutes, or until the squash is tender.
Once the squash is cooked, remove the pot from heat. Use an immersion blender to carefully blend the soup until smooth. If you do not have an immersion blender, you can transfer the soup in batches to a traditional blender, then return it to the pot.
Stir in the coconut milk for added creaminess (if using) and season with salt and pepper to taste. Heat the soup gently on low for another 5 minutes, allowing the flavors to meld.
