Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the sliced bell peppers, red onion, zucchini, yellow squash, and cherry tomatoes.
Drizzle the olive oil over the vegetables and sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss to coat the vegetables evenly.
Spread the seasoned vegetables evenly on a large sheet pan.
Add the sausage pieces to the sheet pan, distributing them evenly among the vegetables.
Place the sheet pan in the preheated oven and roast for 25-30 minutes, or until the sausage is cooked through and the vegetables are tender, stirring halfway through the cooking time.
Once cooked, remove the sheet pan from the oven and let it cool slightly.
If desired, sprinkle with chopped fresh parsley before serving.
