In a large bowl, combine the olive oil, red wine vinegar, minced garlic, oregano, cumin, coriander, paprika, salt, pepper, and lemon juice to create a marinade.
Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, allowing the flavors to meld.
While the chicken is marinating, prepare the tzatziki sauce. In a bowl, mix Greek yogurt, grated cucumber, chopped dill, and a pinch of salt. Blend until smooth and refrigerate until ready to serve.
Preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side, or until the chicken is done and has a nice char. Once done, let it rest for a few minutes before slicing into strips.
