Chop the onion, and sweet pepper and slice the mushrooms. Preheat a skillet to medium-high and add the olive oil
Add the onion and sweet red pepper. Stir and move the ingredients through the skillet until soft and translucent
Then add the ground beef and stir to combine with the soft vegetables. Brown the beef before you add the quesadilla seasoning
Stir well then add the tomato paste and water. Simmer for 5 minutes then set aside
Take a tortilla and sprinkle with shredded cheese then a tablespoon of sweet corn. Then fill half of the tortilla with the ground beef mix
Another tablespoon with corn and top it off with a good helping of shredded cheese. Fold the quesadilla and put it in a warm skillet.
You do not need any oil or butter. Warm the skillet to medium-high and let the tortilla go brown turn and bake the other side of the tortilla.
Take out of the skillet and cut in half or wedges. Repeat with the other tortillas.
