A classic Tom Collins cocktail requires nothing more than gin, zesty lemon, some sweetness and a bit of bubble. Served in a tall glass over ice, it's a perfect sip any time of year.

Fill a cocktail shaker about three-fourths full of ice. Add the gin, lemon juice and simple syrup. Editor's Tip: Put ice in your Collins or highball glass to begin chilling it. Some bartenders pour the soda into the glass at this stage before the other ingredients, but I like to save it for the end.
Cover your shaker and shake only until condensation forms on the outside, about 10 to 15 seconds.
Strain the shaker's contents into the Collins glass, top the glass off with soda water and garnish with a lemon slice and a cherry.
