Using a medium size saucepan on the stovetop over medium high heat, add 1 cups grits, 3 cups chicken broth, 1/2 teaspoon salt, and 1/4 teaspoon ground pepper. Allow it to come to a boil, about 5 minutes.
Cover the saucepan with the lid, reduce the heat to low, and allow the grits to slowly simmer until they thicken, about 5 minutes. Remove the lid and whisk frequently to prevent lumps.
Carefully remove the lid and stir in the 2 tablespoons butter and 3/4 cup shredded cheddar cheese until fully melted and smooth.
Stir in the 1 1/2 tablespoons heavy cream until combined and allow it to cook for 2 to 3 more minutes.
Garnish with some additional shredded cheese and chopped fresh parsley or green onions. Serve immediately while still warm. Enjoy!
