How to Make Vegan Lentil Meatloaf
Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the meatloaf.
Chop the onion, carrot, celery, red pepper, and mushrooms into small pieces.
Sauté the onion and garlic in a skillet over medium heat with a splash of oil. Add the chopped vegetables and season with salt and pepper. Cook until they’re softened and slightly browned, about 5-7 minutes.
Pulse the cooked lentils in a food processor with quick oats, flaxseed meal, bread crumbs, sautéed vegetables, tomato paste, BBQ sauce, mustard, and parsley until combined but still chunky.
Prepare a silicone loaf pan or line a glass pan with parchment paper to prevent sticking.
Transfer the mixture to the loaf pan, gently pressing it down to form a solid loaf shape.
Cover with foil and bake for 35 minutes. Remove the foil, drizzle extra BBQ sauce on top, and bake uncovered for an additional 10 minutes until the top is slightly caramelized.
Let the loaf rest for 10 minutes before slicing.
