Melt the bacon fat in a small frying pan. When hot, add the back bacon and quickly cook. I like colour on my bacon, but you can cook it as little as you like.
Cut the rye bread slice in half then toast. If your slices are small, use 2 uncut slices instead.
Place the cooked bacon on paper towels.
I use a square egg ring to cook my egg, but you can also use a large cookie cutter. Once the egg has set, I remove the shaper. I then flip the egg and cook it slightly so that it’s over easy with a runny yolk. (You can cook your egg to your preference).
Place the slice of cheese on the toasted bread, then the egg and then the bacon slices.
Enjoy! I serve the sandwich with a sliced avocado on the side.
