Our classic cheeseburger recipe keeps things simple because the less you handle your ground beef, the more tender the burger.

Shape beef into 4 patties, about 1" wider than bun; generously season both sides with salt and pepper. Press a wide, shallow indent into the center of each burger.
<strong>If grilling:</strong> Prepare a grill for high heat; preheat 5 minutes (or heat a grill pan over high heat). Grill patties, undisturbed, until a crust develops and they're no longer pink, about 6 minutes. Flip and immediately brush melted butter on top of each patty. Grill until second side is browned, about 3 minutes. Top with cheese. Continue to grill until desired degree of doneness, about 3 minutes more for medium.
<strong>If cooking in a skillet: </strong>Heat a cast-iron skillet over medium-high heat until very hot. Working in batches if needed, cook patties, undisturbed, until a crust develops and they're no longer pink, about 6 minutes. Flip and immediately brush melted butter on top of each patty. Cook until second side is browned, about 3 minutes more. Top with cheese. Continue to cook until desired degree of doneness, about 3 minutes more for medium.
In a medium bowl, combine mayonnaise, mustard, pickle juice, and paprika; season with pepper.
Spread sauce on bottom buns. Top with lettuce, tomatoes, burgers, onions, and pickles. Spread sauce on top buns and close burgers.
