Classic bread pudding

Our bread pudding recipe is hands down some of the easiest thing to make, and the perfect way to use leftover bread.

Preheat your oven to 180°C (160°C Fan). Lightly grease a two-litre baking dish with butter.
In a large bowl, whisk together the milk, eggs, soft brown sugar, mixed spice, cinnamon, and lemon zest until well combined. Add the bread, dried fruit, mixed peel, and melted butter and stir well until everything is evenly combined. Set aside to soak for 15 minutes.
Transfer this mixture to the greased baking dish and level with the back of a spoon. Scatter over the demerara sugar and bake for 1 hour - 1 hour 15 minutes, until golden brown on top and there is no wobble in the middle. Leave to cool slightly before serving with custard or vanilla ice cream, if you like.
