In a Dutch oven or large saucepan, heat the olive oil over medium heat until shimmering. Add the garlic and ginger and cook until fragrant, about 1 minute.
Stir in the chicken broth, water, soy sauce, mirin, sesame oil, and dried shiitake mushrooms. Bring to a boil, then reduce the heat and simmer until the mushrooms are tender, about 10 minutes.
Stir in the shredded chicken and cook just until heated through, about 2 minutes.
Divide the cooked ramen noodles among 4 bowls. Ladle the hot broth, chicken, and mushrooms over the noodles.
Serve with your favorite ramen toppings such as soft-boiled eggs, scallions, jalapeños, bean sprouts, toasted sesame seeds, nori, or chili crisp.
