Instructions
In a large, heavy soup pot, melt the butter over medium-low heat. Add the onions and cook, covered, for 20 minutes.
Preheat the oven to 400°F. Place the soup pot into the oven with the lid slightly ajar. Cook for 1 hour, stirring once halfway through.
Remove pot from oven and place on stovetop over medium heat. If onions aren't yet golden brown, cook for 5 to 10 minutes more, stirring frequently. Turn off heat and pour in the wine. Return to medium heat and cook for 5 minutes.
Add the broths, Worcestershire sauce, garlic, salt, and pepper. Bring to a simmer, then reduce heat to low and simmer for 30 to 45 minutes.
Preheat broiler to low. Butter one side of bread slices and broil for 1 to 2 minutes until brown and crispy.
Ladle soup into oven-proof bowls. Place crispy bread on top, sprinkle with gruyère, and broil until cheese is melted and bubbly, 2 to 3 minutes. Serve immediately.
