Easy Refreshing Cucumber Salad
This easy Cucumber Salad recipe takes just 5 minutes of prep time and features thinly sliced English or seedless cucumbers and red onion tossed in a simple, tangy vinegar and sugar dressing with optional fresh dill. A perfect crisp and refreshing healthy side dish that can be made ahead.

Using a mandoline or sharp knife, thinly slice cucumbers crosswise. Halve and thinly slice red onion.
In a medium bowl, combine sliced cucumbers and red onion. Sprinkle with 1 ¼ teaspoons kosher salt; toss to combine. Let sit for 20 minutes.
Pour off any accumulated liquid from the cucumber mixture.
Add 3 tablespoons vinegar and 2 teaspoons granulated sugar to the drained cucumbers. Toss until sugar is dissolved.
Taste and season with black pepper as needed.
If using, add 1 tablespoon chopped fresh dill and toss to combine.
Serve immediately or chill for at least 15-30 minutes for best flavor. Can be made up to 1 day ahead and refrigerated.
