Toast the Almonds
Melt 1 tablespoon of butter in a large skillet over medium heat. Add the almonds and cook for 3-4 minutes, stirring occasionally, until golden brown. Remove the almonds from the pan and set aside. Wipe the pan clean.
Cook the Green Beans
Melt the remaining 2 tablespoons of butter in the pan. Add the shallots and cook for 3-4 minutes until tender.
Add the green beans and 1 tablespoon of water to the pan. Cook, stirring occasionally, for 4-5 minutes until the green beans are tender-crisp.
Finish and Serve
Stir in the lemon juice, salt, and pepper.
Transfer to a serving dish, then sprinkle the reserved toasted almonds and the chopped parsley over the top. Serve immediately.
