Hearty Minestrone Soup

Heat the oil in a large pot over medium heat. Add the onion, carrots, celery, salt, and pepper. Cook, stirring occasionally, for 8 minutes, until the vegetables begin to soften.
Add the garlic and cook for 1 minute until fragrant.
Stir in the diced tomatoes, beans, green beans, broth, bay leaves, oregano, and thyme. Cover and bring to a simmer. Cook for 20 minutes.
Uncover and stir in the pasta. Cook, uncovered, for 10 more minutes, until the pasta is cooked through.
Remove bay leaves, season to taste, and stir in the fresh parsley. Serve hot with red pepper flakes and Parmesan cheese, if desired.
