Preheat oven to 400°F (200°C). Line a 9×13-inch baking dish with parchment paper. Let salmon come to room temperature for about 10 minutes.
In a small bowl, whisk together soy sauce, olive oil, honey, Dijon mustard, and minced garlic. Reserve half of this sauce in a separate clean dish.
Place salmon, skin side down, in the prepared baking dish. Brush or spoon the first half of the sauce over the salmon fillets.
Bake for 12 minutes.
Remove from the oven and brush the reserved, clean sauce over the top of the salmon.
Return to the oven and bake for an additional 2-8 minutes, or until the salmon is cooked to your liking and flakes easily with a fork. Let rest for 3 minutes before serving.
