Cut eggplants into 3-inch pieces, then quarter lengthwise.
Optional: Soak eggplant in salted water for 15 minutes, then pat dry.
Heat oil in wok over medium-high heat.
Stir-fry eggplant for 3-4 minutes until softened. Remove and set aside.
In same wok, stir-fry garlic, ginger, and white scallion parts for 30 seconds.
Return eggplant to wok and toss to combine.
Mix soy sauces, rice wine, sugar, vinegar, and chili in bowl, then pour over eggplant.
Add water or stock, reduce heat, cover and simmer 10-15 minutes until tender.
Stir in cornstarch slurry to thicken sauce.
Garnish with green scallion parts and serve hot.
