On a clean surface, form a mound with the flour. Make a well and crack eggs into the center. Add olive oil and salt. Gradually incorporate the flour until a smooth dough forms. Knead 8–10 minutes until elastic. Wrap in plastic and rest 30 minutes.
In a bowl, mix ricotta, Parmesan, puree, nutmeg, salt, and pepper. Taste and adjust seasoning.
Roll dough thin (about 1/16 inch) using a pasta machine or rolling pin. Place teaspoons of filling evenly spaced on one sheet. Top with a second sheet, press edges, and cut into squares or circles. Ensure no air bubbles remain.
Bring a large pot of salted water to a boil. Cook ravioli 3–4 minutes until they float. Drain gently.
In a pan, melt butter over medium heat. Add sage leaves and optional red pepper. Pour over cooked ravioli and toss gently. Finish with grated Parmesan.
