Cottage Cheese Pancakes That Stay Fluffy and Delicious Every Time
These thick and fluffy cottage cheese pancakes were inspired by a breakfast I had at Arthur's Nosh Bar during a weekend trip to Montreal. Back home in New York, I couldn’t stop thinking about them so I set out to recreate that same tender texture and cozy flavor in my own kitchen. This version brings the same comfort, with a simple steam trick that makes them puff up beautifully every time.

In a medium bowl, whisk together the cottage cheese, Greek yogurt, eggs, milk, and oil until smooth and well combined. Sprinkle in the sugar, baking powder, and salt, then stir gently to distribute everything evenly. Add the flour last and mix just until the batter comes together it should be very thick.
Heat a large skillet over medium heat and coat it generously with neutral oil or clarified butter. Scoop 1/4 cup of batter for each pancake, letting it mound up tall in the pan. Cook until the edges look set and the bottom is golden brown, about 1 to 2 minutes. Flip and cook the other side for another 1 to 2 minutes.
If the center still looks undercooked, quickly pour 1 to 2 teaspoons of water into the pan and cover with a lid. Let the steam finish the job in another minute or two, the pancakes will puff up and cook through perfectly. Serve them hot with a generous drizzle of maple syrup and enjoy every bite!
