In a medium saucepan, combine soy sauce, 1/4 cup water, brown sugar, honey, garlic, and ginger. Stir well to dissolve the sugar.
Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally.
In a small bowl, whisk together the cornstarch and 2 tablespoons of cold water to form a slurry.
Slowly add the slurry to the saucepan while stirring continuously.
Continue cooking for 2–3 minutes, or until the sauce thickens and becomes glossy.
Remove from heat and let it cool before using. Store leftovers in an airtight container in the refrigerator for up to 1 week.
