Garlic Aioli
Garlic Aioli is a creamy, bold Mediterranean sauce made with fresh garlic, egg, olive oil, lemon juice, and Dijon mustard. This homemade Garlic Aioli is smooth, rich, and perfect as a dip, spread, or drizzle for fries, sandwiches, seafood, and roasted vegetables.

Peel and finely mince the garlic cloves, then mash them into a smooth paste using the flat side of a knife or a mortar and pestle.
Add the egg, lemon juice, Dijon mustard, salt, and garlic paste to a tall mixing container or bowl.
If using an immersion blender, pour the oil over the mixture. Place the blender at the bottom and blend without moving it until the mixture begins to emulsify and thicken.
Slowly lift the blender upward to incorporate the remaining oil until a thick and creamy Garlic Aioli forms.
If whisking by hand, slowly drizzle the oil into the egg mixture in a thin stream while whisking continuously until fully emulsified and thick.
Taste and adjust with additional salt or lemon juice as needed. Refrigerate for at least 30 minutes before serving to allow flavors to develop.
