Cooking Instructions
Wash the rice: Rinse 3-4 times until the water is almost clear to remove excess starch. Soak it overnight for at least 8-24 hours.
Steam the rice: Drain the soaked rice and place it on a bamboo steamer lined with parchment paper. Steam for 20-25 minutes until cooked and slightly translucent.
Create the coconut mixture: Heat 1 cup of coconut milk over medium-high heat. Add sugar and salt, allowing it to simmer until it reaches a gentle boil.
Combine flavors: Lower heat and stir until the sugar is fully dissolved. Mix in the ube spread and extract if using.
Mix rice and coconut: Fold in the steamed rice into the coconut milk mixture and cook for about 4 minutes.
Prepare the coconut sauce: Combine 1/2 cup coconut milk and 2-3 tbsp sugar over medium-high heat and cook until it boils.
Thicken the sauce: Dilute cornstarch in 2 tsp of water and add to the coconut milk while stirring until it thickens.
Slice the mangoes: Peel and cut the mangoes into 1/4-inch thick strips.
Assemble and serve: Portion the rice onto plates, arrange mango slices on the side, top with toasted coconut, and drizzle with the coconut sauce.
