How to Make Reverse Sear Steak
Preheat your oven to 275°F.
Season your steak generously with kosher salt and black pepper, pressing it in. Chill in the refrigerator for 6 to 12 hours if possible.
Place your steak on a wire rack in the oven and bake until an instant-read thermometer shows 110°F for medium-rare, approximately 25 to 35 minutes.
Heat a cast-iron skillet over medium-high heat and add oil. Once it shimmers, place the steak presentation side down and sear for about 1 minute.
Flip the steak, add butter, garlic, and thyme. Baste the steak with the melted butter for 30 seconds.
Transfer the steak to a cutting board and let it rest for 5 to 10 minutes before slicing against the grain.
Optional: Serve with a sprinkle of flaky sea salt.
