Making Spring Rolls
Sift 250 g of flour into a large bowl. Create a well in the center, add 1 egg, and a little water. Mix with chopsticks, gradually adding more water until an elastic dough forms. Cover and let rest for 10-15 minutes.
Chop the vegetables and combine all filling ingredients in a large bowl. Whisk another egg for sealing.
Knead the rested dough and roll it out into squares for the wrappers.
Heat cooking oil in a wok. Stir-fry green onions and then add the vegetable mixture. Season and cool.
Take a wrapper, place a spoonful of filling, fold and roll tightly, sealing with egg.
Fry in hot oil until golden brown and crispy. Drain and serve warm.
