If using dried noodles, soak them in warm water for about 30 minutes until soft but not mushy. Drain and set aside.
In a small bowl, mix together soy sauce, oyster sauce, dark soy sauce, and sugar until combined. Set aside.
Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
Add the minced garlic and sauté until fragrant, about 30 seconds.
Add the sliced chicken or beef to the pan and stir-fry until cooked through, approximately 3-4 minutes.
Push the meat to one side of the pan, and crack the eggs into the empty side. Scramble them, mixing with the meat once they are cooked.
Add the Chinese broccoli to the pan and stir-fry for 2 minutes, or until it begins to soften.
Add the noodles to the pan, pouring the prepared sauce mixture over them.
Toss all ingredients together, ensuring the noodles are evenly coated and heated through, about 2-3 minutes.
Season with pepper to taste and adjust seasoning if necessary.
Serve immediately, garnished with additional soy sauce or chili flakes if desired.
