Preheat your oven to 300°F (150°C). Remove the membrane from the back of the ribs for better flavor absorption. Rub the ribs with olive oil, then season generously with salt and pepper.
In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, and salt and pepper. Simmer over low heat for about 15 minutes, stirring occasionally.
Place the seasoned ribs on a baking sheet lined with aluminum foil. Cover tightly with foil and bake in the preheated oven for 2.5 hours, until the meat is tender.
Remove the ribs from the oven and uncover. Brush the ribs generously with barbecue sauce, then return them to the oven (uncovered) for an additional 30 minutes, allowing the sauce to caramelize.
Let the ribs rest for a few minutes before slicing. Serve with extra barbecue sauce on the side.
