In a large bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until frothy.
Add melted butter and salt, then gradually mix in flour until dough forms.
Knead for 8 minutes until smooth and elastic. Transfer to a greased bowl, cover, and let rise for 1 hour or until doubled in size.
Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
Bring 10 cups of water and baking soda to a boil in a large pot.
Punch down dough, divide into 8 equal pieces, and roll each into a 20-inch rope. Shape into traditional pretzels by forming a “U,” twisting the ends twice, and pressing them down.
