How to Make Cabbage Rolls
Bring a large stock pot of water to a boil. Add the whole head of cabbage and boil for 5 minutes. Remove it to a colander to drain and cool. Cut 1/2 inch off the stem end of the cabbage, and gently remove 12 leaves while cutting out the tough rib in a V-shape.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes, stirring frequently. Reduce the heat to low and add minced garlic, cooking for about 1 minute while stirring constantly.
Add tomato sauce, diced tomatoes, cider vinegar, and brown sugar to the skillet. Season with salt and pepper to taste, and let it simmer for 10 minutes to combine the flavors.
Spoon a thin layer of the tomato sauce into a 9 x 13-inch casserole dish, covering the bottom to keep the cabbage rolls nice and moist.
In a large bowl, combine the ground pork sausage, ground beef, remaining finely chopped onion, garlic, egg, rice, parsley, and paprika. Mix well until fully combined.
Place about 1/3 cup of the meat mixture in the center of each cabbage leaf. Tuck in the sides and roll it tightly.
Place the rolls seam-side down in a single layer over the tomato sauce in the casserole dish. Top with the remaining tomato sauce.
Cover the dish with aluminum foil and bake in a preheated 350-degree oven for 80-90 minutes, until everything is cooked through and deliciously tender.
