Beef and Broccoli is a classic stir-fry featuring tender slices of beef and crisp-tender broccoli, all smothered in a savory and flavorful sauce made with soy sauce, garlic, and ginger. A quick and satisfying meal for busy weeknights.

Slice the flank steak or sirloin thinly against the grain. For easier slicing, freeze the beef for 30 minutes.
Bring a pot of water to a boil and blanch the broccoli florets for 2-3 minutes until bright green and slightly tender. Drain and set aside.
In a small bowl, whisk together the soy sauce, oyster sauce (if using), brown sugar, cornstarch, water, garlic, ginger, and rice vinegar or sesame oil. Stir until the sugar dissolves and cornstarch is fully incorporated.
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the beef in batches and sear for 2-3 minutes per side until browned. Remove and set aside.
In the same skillet, add the remaining oil and sauté the broccoli for 2-3 minutes until tender but still vibrant.
Return the beef to the skillet with the broccoli and pour the sauce over the mixture. Stir and cook for 1-2 minutes until the sauce thickens and everything is coated.
Serve the Beef and Broccoli hot over steamed rice or noodles. Garnish with sesame seeds or chopped green onions if desired.
