Heat the olive oil in a large deep skillet or Dutch oven over medium high heat. Add the diced eggplant and cook for 5 to 6 minutes, stirring occasionally, until golden. Remove and set aside.
In the same pot, add the ground beef and onion. Cook for 6 to 7 minutes, breaking up the meat as it goes, until the beef is browned and the onion has softened.
Stir in the garlic, cinnamon and oregano and cook for about 1 minute, until fragrant.
Add the diced tomatoes, tomato paste and broth, stirring to combine, and bring the mixture to a simmer.
Return the eggplant to the pot and stir in the uncooked pasta. Cover and simmer for 12 to 15 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
Remove from the heat, season with salt and pepper, and finish with a scattering of feta and fresh parsley before serving.
