Boil the Shells: Cook jumbo shells in salted boiling water until al dente (about 8–10 minutes). Drain and drizzle with olive oil to prevent sticking. Let cool slightly.
Prepare the Filling: In a large bowl, mix ricotta, 1 cup mozzarella, Parmesan, egg, parsley, salt, and pepper until creamy and well combined.
Make the Sauce: Heat olive oil in a pan over medium heat. Sauté garlic for 30 seconds. Add marinara sauce and Italian seasoning. Simmer for 5 minutes.
Assemble the Dish: Spread 1 cup of sauce in the bottom of a 9x13 baking dish. Fill each shell with about 1 tablespoon of cheese filling and place it in the dish seam side up.
Top and Bake: Pour remaining sauce over the stuffed shells. Sprinkle extra mozzarella on top. Cover with foil and bake at 375°F (190°C) for 25 minutes. Uncover and bake for 10 more minutes until bubbly and golden.
